Sauteed Spinach and Red Peppers

A delicious detoxifying side dish for grilled chicken, burgers, meatloaf, meatballs, etc.


    1 tsp. coconut oil

    1/2 c. red bell pepper

    1 clove garlic

    2 c. spinach

    sea salt & black pepper to taste


Heat coconut oil in a skillet over medium-high heat. Add chopped red pepper, and cook for 1 minute. Add minced garlic, and cook for another 1-2 minutes. Add spinach, and season with sea salt and pepper. Cook, stirring occasionally, for 1-2 minutes, until spinach is just wilted.
