Sauteed Chicken with Asparagus and Peppers

Quick and easy recipe that's perfect for a busy weeknight!


    1 med. onion

    1 clove garlic

    1 tbsp. chicken broth

    1/2 lbs. chicken breast

    1/2 med. red bell pepper

    2 c. asparagus

    2 tbsp. wheat-free soy sauce

    sea salt & black pepper to taste


Put chicken broth in a skillet over medium-high heat. Add onions (cut in half and into slices) and peppers (cut into slices) and sauté for about 2 minutes, stirring constantly. Add minced garlic and chicken (cut into bite-sized pieces), sauté for 3-4 minutes, stirring constantly. Add asparagus (cut into 1-inch pieces) and soy sauce. Stir it all up, and cover. Cook for 2-3 minutes, until asparagus is tender.
