Sausage, Potato, and Kale Soup

A healthified version of Olive Garden's Zuppa Toscana!


    1 tbsp. avocado oil

    1 lbs. Italian turkey sausage

    2 med. russet potatoes

    4 clove garlic

    2 tbsp. Italian seasoning

    sea salt & black pepper to taste

    6 c. chicken broth

    4 c. kale


Heat avocado oil in a large pot over medium heat. Add ground sausage, breaking it into small pieces. Cook, stirring occasionally, until sausage is browned.

While sausage is cooking, chop potatoes into small cubes.

When the sausage is browned and cooked through, add chopped potatoes and minced garlic to the pot. Season with Italian seasoning, sea salt, and pepper. Add chicken broth, and stir to mix.

Bring mixture to a boil, and then reduce heat to a simmer. Cook for 15-20 minutes, until potatoes are tender.

Add chopped kale to the pot, stir to combine, and cook until kale is wilted.

Remove from heat, and serve warm. Leftover soup can be stored in an airtight container in the refrigerator. To reheat, pour soup into a pot over medium-low heat.
