Salad isn't just for lunch anymore!
1 tsp. butter
3 oz. chicken sausage
1 c. brown mushrooms
1/2 med. bell pepper, any color
1 c. spinach
sea salt & black pepper to taste
Heat butter in a large skillet over medium heat. Slice up the chicken sausage. Once butter is melted, add the sausage, sliced mushrooms, and sliced bell pepper to the pan. Sauté until sausage is heated through and a little crisp (around 8-10 minutes). The mushrooms and bell pepper stand up to heat pretty well, so they won’t be mushy. Season with sea salt and pepper. You can then add the spinach into the pan and sauté for 1-2 minutes until wilted or just place the fresh spinach onto a plate and top with the sausage/veggie mixture.
