This dish tastes soooo much better than those frozen bowls you get in the freezer aisle... its satisfying, easy, healthy and makes great leftovers too!
1 tbsp. coconut oil
6 oz. white or gold potatoes
sea salt & black pepper to taste
1/2 c. bell pepper, any color
1/2 c. onion
1/2 lbs. turkey breakfast sausage
4 egg
2 oz. mild cheddar cheese
Heat skillet over medium-high heat and add coconut oil. When skillet is hot and coconut oil is melted, add in the cubed potatoes, salt, and pepper. Cook until potatoes have a nice sear on them, about 5-7 minutes. Reduce heat to medium and add in the chopped peppers and onions. Cook another few minutes until onion starts to soften, about 3-5 minutes. Add in the sausage, breaking it up with a spatula until it's nicely crumbled and browned all the way through, about another 5 minutes or so. After the sausage is cooked through turn the heat down to medium-low and add in the eggs. Wait a minute for the eggs to cook a bit and then carefully fold them into the sausage (think scrambled eggs) until they are cooked through - this should only take a minute. Remove from heat and sprinkle with grated cheddar cheese if you desire. Serve to a family of 4 or put the leftovers in the fridge for tomorrow!
