You don’t have to let a cold stop you from missing out on homemade Italian dishes! This simple, yet nourishing, soup is a full meal that is sure to satisfy the entire family any night of the week.
1 lbs. Italian chicken sausage
1 tbsp. avocado oil
1/2 c. celery
4 clove garlic
1 tbsp. fennel seed
2 tbsp. tomato paste
14 1/2 oz. crushed tomatoes, canned
2 c. water
1 lrg. zucchini
3 c. spinach
sea salt to taste
Heat a deep skillet over medium high heat; add olive oil. If chicken sausage is raw, remove from casing and add to skillet; break it up as it browns. If chicken sausage is already cooked, slice sausage into ¼-inch pieces and add to skillet; sauté until heated through.
Add celery and cook, stirring occasionally, for about 5-8 minutes.
Add minced garlic and crushed fennel seed and stir. Add tomato paste and stir again. Add crushed tomatoes and water; stir and bring to a boil. Add diced zucchini and roughly chopped spinach and cook for 15 minutes, or until vegetables are tender. Season with sea salt to taste and enjoy!
