An amazing flavor and so much better for you than going out to eat!
1 pkg. brown rice pasta
1 lbs. Italian chicken sausage
1 tbsp. garlic
1 oz. diced tomatoes, canned
5 oz. baby spinach
1/4 c. feta cheese
1/4 c. mozzarella cheese
1 sea salt, pepper, and garlic
1 extra virgin olive oil
Preheat oven to 350 degrees F and fill a large bowl with cold water and ice, set aside. Bring a large pot of salted water to a boil. Add pasta shells and cook according to package directions. Drain well then add to ice water until ready to use, then drain again.
Heat a large skillet over medium-high heat. Wilt the spinach with a little olive oil and salt and pepper to taste. remove from skillet and set aside. Add Chicken sausage to same skillet, use a wooden spoon to break up the sausage, cook 5-6 minutes until browned.
Add garlic and cook 30 seconds then add tomatoes and spinach; cook 1 minute. Remove pan from heat and stir in feta cheese.
Using a spoon, mix pasta shells with chicken filling and arrange in a lightly oiled baking dish. Sprinkle tops with shredded cheese then bake in the oven 25-30 minutes until cheese has melted and tips of shells begin to crisp and brown.
