Had friends over for breakfast this morning and I made this with along with some scrambled eggs and fresh melon. Everyone really loved it! No one really knew that they were eating a totally healthy meal and it was so good :)
7 med. white or gold potatoes
1/2 c. green bell pepper
2 c. garlic
1/2 c. red bell pepper
1 med. onion
1/2 lbs. Italian turkey sausage
2 tbsp. coconut oil
1/4 tsp. black pepper
sea salt to taste
Cut potatoes into 1/2-inch cubes, place in a saucepan, and cover with water. Bring to a boil; reduce heat. Cook, uncovered, just until tender, about 10 minutes. Don't let it turn to mush!
In a skillet coated with a with a bit of coconut oil, saute chopped peppers, chopped onion, and minced garlic until tender; stirring often.
Cut sausage into small chunks; add to vegetable mixture in pan. Cook, uncovered, for 6-8 minutes or until heated through.
Drain the potatoes; add to vegetable/sausage mixture. Add the coconut oil, pepper, and sea salt if desired. Mix well.
Transfer to an ungreased 13x9 inch baking dish. Bake, uncovered, at 350°F for 35 minutes or until heated through.
