Sausage and Asparagus Pasta

Excellent weeknight meal - comes together quickly and sure to please!


    1 c. quinoa pasta

    1 tbsp. coconut oil

    1 clove garlic

    1 c. asparagus

    1/2 lbs. Italian chicken sausage

    2 tbsp. parmesan cheese


Cook quinoa pasta according to directions on the package. Cut asparagus spears into three pieces. Slice cooked sausage (if the sausage is not pre-cooked, brown them in a skillet first, let cool, and slice).

Heat coconut oil in a large skillet over medium heat. Add minced garlic and asparagus pieces. Sauté until asparagus starts to soften, 4-5 minutes. Add sausage pieces, and continue to cook until sausage is heated through. Add cooked quinoa pasta, and stir well. Sprinkle with parmesan cheese, and serve warm.
