Make this recipe with your favorite BD-approved rice! Each serving is about 1/2 cup.
4 med. tomato
2 garlic
1/2 sml. onion
4 tbsp. chicken stock
2 c. rice, any kind
sea salt to taste
1 tbsp. coconut oil
5 c. chicken stock
To make the sauce: Combine chopped tomatoes, chopped onion, chopped garlic cloves, and 2-4 tablespoons of chicken stock in a blender or food processor. Blend until well incorporated (doesn't need to be completely smooth).
Heat coconut oil in a pan over medium heat. Add rice and cook for about 3 minutes. Add the sauce to the pan, stir it all up, and cook for about 2 minutes. Add 5 cups of chicken stock to the pan, and season with salt. Turn heat to high until the mixture boils. Once it's boiled, lower the heat and let stand covered for about 45 minutes, or until all of the chicken stock has been absorbed.
