This chicken dish is really delicious and you can make it as mild or hot as you'd like. Quick to put together and cook!
1 tbsp. coconut oil
3 tbsp. spelt flour
1 tsp. chili powder
1 tsp. dried parsley
1 lbs. chicken breast
15 oz. tomato sauce
1/2 c. fresh made salsa
Combine flour, chili seasoning, and dried parsley. Cut chicken into four pieces. Coat chicken pieces in the flour mixture.
Heat coconut oil in a large skillet over medium high heat. Brown chicken for 3-4 minutes on each side.
In a large bowl, combine tomato sauce, salsa, and any remaining flour mixture. Mix well, and then spoon sauce mix evenly over chicken. Lower heat, cover, and simmer for 15-20 minutes or until chicken is tender. When serving, spoon sauce mixture over the chicken breasts.
Serve with veggies, salad, quinoa, or rice. I made Mexican Rice and it went very well with this delicious chicken dish!
