Salmon Potato Cakes

Great way to use leftovers or make fresh to serve at any meal.


    2 sml. red potatoes

    1 c. baked salmon

    1 egg white

    2 sml. green onion

    1 tsp. fresh parsley

    fresh dill weed to taste

    1 coconut oil


Half red potatoes and simmer until done. Mash, leaving them chunky. Combine with flaked salmon, egg white and seasonings. Toss gently until mixed and egg white worked through. Heat oil in a non-stick skillet. Shape salmon mixture into 2 patties. Flatten slightly and cook 7 mins. until browned, turning once. Gently remove from pan and enjoy! P.S. You can also use leftover baked potato.
