Salmon baked in Foil

This is quick and easy. I do not add salt even though the recipe calls for it.

Ingredients

    1 tbsp. dried thyme

    1 tbsp. dried oregano

    2 tbsp. lemon juice

    2 shallots

    3 diced tomatoes, fresh

    sea salt & black pepper to taste

    2 tbsp. extra virgin olive oil

    25 oz. salmon

Directions

Preheat over to 400 degrees Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme salt and pepper in a medium bowl to blend. Place a slamon filet atop a sheet of foil. Wrap teh ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon, Fold the sides of the foil over the fish covering competlely. Place the foil packet on a baking sheet. repeat with all slamon filets. bake until the salmon is just cooked through, about 25 minutes.
