mixed vegetables
8 oz. white mushrooms
2 tbsp. extra virgin olive oil
sea salt & black pepper to taste
1 c. parmesan cheese
2 tsp. fresh basil
4 celery stalk, fresh, organic
1 red bell pepper
1 c. carrot
2 c. eggplant
1 yellow onion
2 garlic
Prepare vegetables and place in a large cassarole dish, pour olive oil over vegetables, (if using dried basil, add now. Sprinkle with salt and pepper if desired, and stir. Cover and roast in 350 degree oven for one hour until vegetables are tender! If using fresh basil add now. Remove from oven and sprinkle with parmesan cheese and cover again. Allow cheese to melt. Enjoy!
