Such a wonderful combination of flavor!
5 lrg. tomato
3 tbsp. extra virgin olive oil
2 tbsp. garlic
sea salt & black pepper to taste
1 1/2 lbs. shrimp
1/2 c. fresh parsley
2 tbsp. lemon juice
1 c. feta cheese
Preheat oven to 450°F. Cut the tomatoes into eighths, and arrange them in a large baking dish. Spoon olive oil and minced garlic over tomatoes. Sprinkle with 3/4 teaspoon each salt and pepper and toss. Roast on top rack of oven for 20 minutes.
Remove baking dish from oven and stir in the shrimp (peeled and de-veined), chopped parsley, and lemon juice. Sprinkle with the crumbled feta. Return the dish to oven until the shrimp are cooked through, 10 to 15 minutes.
You can eat as is or serve on top of a bed of lettuce.
