Roasted Salmon with Potatoes and Mushrooms

You'll think you're at a restaurant when you try this salmon recipe!


    8 oz. red potatoes

    1 c. white mushrooms

    4 tsp. extra virgin olive oil

    sea salt & black pepper to taste

    8 oz. salmon

    1 1/2 tsp. red wine vinegar

    1 1/2 tsp. mustard

    1/2 tsp. honey, raw

    1 tbsp. fresh parsley


Preheat oven to 400ºF. Line a baking sheet with parchment paper.

Toss together cubed potatoes, mushrooms, 2 tsp olive oil, sea salt, and pepper. Arrange mixture on baking sheet and roast, tossing once, until the potatoes begin to soften, about 20 minutes.

Push the veggies to the edges of the baking sheet, and place the salmon fillet in the center. Season the salmon with sea salt and pepper. Roast until the salmon is opaque, the mushrooms are tender, and the potatoes are golden brown (should take about 12-15 minutes).

Meanwhile, in a medium bowl, whisk together red wine vinegar, mustard, honey, chopped parsley, remaining olive oil, sea salt, and pepper.

Drizzle the vinaigrette over the salmon and veggies before serving.
