Crisp and delicious side dish!
1/2 c. white quinoa
1 c. water
1 tsp. coconut oil
2 clove garlic
3/4 c. asparagus
1/4 c. roasted red pepper
sea salt & black pepper to taste
Combine quinoa and water in a medium saucepan. Cover and bring to a boil. Reduce heat, and let simmer for about 10 minutes, until all liquid has been absorbed. Remove from heat and set aside.
Heat oil in a pan over medium heat. Add minced garlic and chopped asparagus; sauté until crisp tender. Stir in cooked quinoa and chopped red pepper. Heat through.
