I have always been a junk food snacker. While researching for a BD-approved alternative, I ran across these chips. So crisp, light and airy, and a unique flavor that satisfies that desire for the "bad stuff." Also, I have never been a particular fan of kale, but these are unique and have a great taste all their own.
1 tbsp. balsamic vinegar
1 bch. kale
3 tbsp. extra virgin olive oil
sea salt & black pepper to taste
Wash and totally dry the kale. With a sharp knife take the rib out of the center of the kale. Tear leaves into approximately 2-inch pieces (try to only use the leafy part and no part of the stems). Place in a bowl.
Mix olive oil and balsamic vinegar together until well blended and pour over kale. Toss until kale is well coated.
Bake at 400ºF for 5 minutes, remove from oven, toss with spatula, and return to oven for another 5 minutes or until crispy and browned.
When you pick these up to eat you will not believe how light and crispy they are. They actually almost float in the air!!
