My husband and I love rice dishes, but we found we weren't fond of just swapping the rice for quinoa but found this to be a really good mix.
3/4 c. brown rice
1/4 c. white quinoa
1 1/4 c. chicken broth
3 stlk. celery stalk, fresh, organic
12 oz. bean sprouts, fresh, organic
1 sml. green bell pepper
1 sml. onion
1/2 red bell pepper
3 white mushrooms
1/4 tsp. sea salt
2 tbsp. coconut oil
In a separate pan boil the brown rice/quinoa mix in the broth of your choice. Let stand while you prepare the veggies. Melt the coconut oil in a large pan ( I use a dutch oven as it yields a lot when everything's combined) Add onion, peppers, celery, mushrooms, sea salt and saute till onions are translucent and peppers are soft Add bean sprouts or green beans Cook for about 5 minutes, mixing well Add fully cooked rice/quinoa mixture Stir well and serve as a side dish, or add some cooked chicken or ground beef into the mix for a main dish.
