Thought you could never have potato chips again - WRONG! These are amazing and very simple to make.
1 c. red potatoes
3 tbsp. coconut oil
sea salt to taste
Slice the potatoes as thinly as possible - suggest using a mandolin-type slicer. Soak in ice water for a few minutes, rinse, and drain on paper towels and dry of excess water (potatoes need to be dry or the oil will splatter). Heat enough coconut oil in skillet (or use fryer if available) to cover the bottom well (I had about 1/4 inch in bottom of skillet) - oil needs to be pretty hot but not smoking (on my stove I had it a little over med.). Place a single layer of potato slices in hot oil, turning with tongs as they brown. When nice and golden brown, remove from oil and place on paper towel to drain. Sprinkle with sea salt and ENJOY!
