Real Fruit Snacks

Homemade healthy fruit snacks!


    2/3 c. lemon juice

    2/3 c. mixed berries

    2 tbsp. honey, raw

    5 tbsp. gelatin


Combine juice and berries in a small saucepan. Heat over medium heat, stirring occasionally, until the berries start to soften. Stir in honey. Continue to cook until the berries have dissolved a bit. Puree the mixture - use an immersion blender to puree right in the saucepan, or pour the mixture into a small blender. Let cool for 5-10 minutes.

Use a whisk to vigorously stir in the gelatin, one tablespoon at a time. It's important to add a little at a time to avoid lumps. If any lumps do form, you can puree the mixture again or put it back on heat to help the gelatin dissolve.

Pour the mixture into a square (8x8) dish. Refrigerate for 30 minutes to an hour, until the mixture is set. Cut into small squares. Store in the refrigerator or at room temperature.

*Fresh squeezed orange juice can be used in place of the lemon juice if you don't like sour. **The berries can be fresh or frozen - both will work. ***Great Lakes unflavored gelatin works well and comes from grass-fed cows.

Entire recipe contains about 5 protein and 2-3 carbs. At 5 servings, each serving contains 1 protein and 1/2 carb. Enjoy!
