Raw Vegan Chocolate Cashew Cookies

these are delicious chocolatey cookies made in the dehydrator leaving them completely raw. they are oh so decadent and you wouldnt believe how healthy and easy they are! makes approx 30 cookies


    2 c. cashews

    1/2 c. cacao powder

    2 tbsp. coconut oil

    1/2 c. maple syrup

    2 tsp. vanilla extract

    1/2 tsp. sea salt


  1. coarsely grind cashews in a food processor
  2. add in cocoa powder and pulse until its the texture of bread crumbs.
  3. add in all other ingredients and pulse until well combined and forms a ball.
  4. either roll the dough out on parchment paper to 1/4 inch thick and cut cookies with cookie cutters or scoop out tablespoons of the dough and flatten into cookies.
  5. lay the cookies out on the racks of your dehydrator and set at 115f and run for 24-48 hours depending on how chewy you want the cookie to be. note- you may be able to do these in the oven at the lowest setting for 6-12 hours if you dont have a dehydrator but keep an eye on them and they technically wont be considered raw because they have reached temps over 115f :) store in the fridge
