Delicious and healthy snack option that is filling and satisfies that chocolate craving all at the same time.
1 c. peanuts
1 tsp. honey, raw
1 tsp. sea salt
2 tsp. coconut oil
2 tbsp. cacao powder
2 dsh. stevia
1) Put 1 cup of raw peanuts into food processor or blender. Grind until peanuts become fine in texture. 2) Add honey, salt, cocoa powder, and Stevia. 3) Continue to blend together for about 6 minutes until smooth at low to medium speed, or until butter reaches consistency desired. Be sure to scrape sides of bowl down to continue blending as mixture will stick to the sides of the bowl. 4) Adding coconut oil is optional. Oil may be needed for the nut butter to become smooth. Most nuts will release their own oils as they blend, so it is not necessary to add, but you can if you would like or want to add some of the coconut flavor to the mixture. Make sure if using to add it in slowly, drizzle, so as to not use too much and end up with an overly oily mixture. 5) Nut butter will be warm when finished. Place in an air tight container. Can be left out for about 3 days, or refrigerated for about a week. Mixture may harden if placed in the refrigerator. You can set out for about 30 minutess to soften.
Enjoy as a snack, add it to a smoothie, or use it in other recipes! You can also add some peanut pieces for a crunchy version, but be sure to adjust the protein amount per serving.
