A delicious chocolate fudge with real walnuts to satisfy that chocolate craving. These are so good!
1 c. date
1 c. walnuts
3 tbsp. cacao powder
1 tsp. vanilla extract
3 tbsp. coconut oil
1/4 c. shredded coconut
Mix pitted dates, chopped nuts, cacao, vanilla extract, and oil together in a food processor or by hand. Squeeze and roll mixture with your hands into balls. Roll balls in coconut to cover all sides. Refrigerate to set.
Here is what I did: I used 4 large Medjool dates and cut them up very fine with a knife, added 1.5 ounces finely chopped and 1/2 ounce coarsely chopped walnuts, 2 teaspoons coconut oil. Mixed this with my hands until well mixed (very messy) and then added 1 tablespoon raw cacao powder and continued to mix. I rolled the mixture into 4 balls and flattened them like cookies and topped each with a half walnut. Fixed this way they come out to 1 protein and 1 carb per ball. Talk about heavenly.
I think you could use other types of nuts, dried fruit or coconut also.
