Raw Energy Bars

This recipe is a template - any combination of nuts/seeds would work.


    1 1/2 c. oats, whole, dry, organic

    1/2 c. pecans

    1/2 c. walnuts

    1 c. dried currants

    1/2 c. golden raisins

    1/3 c. chia seeds

    1/2 c. cacao nibs

    1/2 c. shredded coconut

    1/3 c. pumpkin seeds

    1 tbsp. cinnamon

    1 1/2 tbsp. coconut oil

    1 tbsp. orange zest

    1 pinch sea salt


Combine entire ingredients into food processor and mix very well until becomes a paste. It's helpful to first mix nuts and oats, then start adding other ingredients.

Line a square pan (8x8 or 9x9) with parchment paper.

Pack entire mixture into pan and press down evenly. Cover and refrigerate 6-8 hrs before cutting into 8 bars.
