Delicious! Tastes almost like a fudge.
1 c. date
4 tbsp. shredded coconut
2 tbsp. honey, raw
1/4 tsp. sea salt
1 c. pecans
Place pecans in food processor and process until they are small and crumbly.
Add dates to the pecans and process again until the mixture sticks together and the dates are well processed.
Add the remaining ingredients and process again until the mixture turns a lovely dark chocolatey brown. Stop processing before it gets too buttery. (There should still be air between the small bits so that you will be able to press them down into your brownie pan.)
Dump the mixture into a brownie dish or small cake pan (I use a 6 x 6 square plastic storage container). Refrigerate for a couple of hours, as it is much easier to slice when chilled. Store in the refrigerator.
