Raw, vegan mayonnaise.
1 avocado
1 tbsp. apple cider vinegar
1/2 tsp. sea salt
1/4 c. extra virgin olive oil
Place all but oil in blender or food processor. Pulse till combined. While processor is running, slowly drizzle in the oil, in a thin, yarn-thick stream. Continue until all of the oil has been combined and the mayo is dense and creamy. Cover and store in refrigerator. Keeps for about 2 weeks.
