My personal version of this traditional recipe from the south of France, bursting with flavor and vitamins :) Using coconut oil instead of olive oil makes it even better in my opinion. Goes really well as a side dish with meat, rice, quinoa, etc.
1 tbsp. coconut oil
1 med. yellow onion
6 fl oz. chicken stock
2 med. zucchini
5 med. tomato
1 sml. red bell pepper
1 sml. yellow bell pepper
1 tsp. dried rosemary
1 tsp. dried thyme
1 tbsp. fresh basil
1 garlic
In a large deep pan, heat coconut oil. Add onion and fry until soft but not brown. Add peppers and fry until soft but not brown. Turn the heat down a bit. Add chicken stock and simmer for a few minutes. Add zucchini, cover, and simmer for 15 minutes. Add tomatoes, sprinkle herbs and garlic on top, cover, and simmer for another 30 minutes. Turn off stove and leave pan covered for another 15 minutes before serving.
Lovely eaten right away but even better reheated the next day ;)
