A great vinaigrette for a spinach salad or for just whenever you want something sweet and tangy
1/4 c. raspberries
1/2 c. extra virgin olive oil
1/3 c. apple cider vinegar
1 tbsp. dijon mustard
1 tsp. maple syrup
mix all ingredients in a food processor until blended and enjoy. 1 TBS is equal to 1 fat
Notes: You can vary the amounts of vinegar and oil... I like a 2 to 3 ratio for this recipe since the raspberries are naturally sweet. Goes great on top of spinach with a bit of pepper and walnuts.
