Ranchero Egg Scramble

Kick your eggs up a notch with ranchero sauce!


    1 tsp. coconut oil

    1/2 c. bell pepper, any color

    2 tbsp. red onion

    2 egg

    2 tbsp. Greek yogurt

    1/4 c. fresh made salsa


Heat coconut oil in a skillet over medium heat. Add diced peppers and onion, and sauté until tender. While veggies are cooking, whisk eggs together in a small bowl. Pour eggs into skillet with the veggies and cook, moving eggs around to scramble them.

In another small bowl, mix together salsa and Greek yogurt to make ranchero sauce.

Plate eggs and veggies, stir in ranchero sauce, and enjoy!

*Eggs can be cooked any way you like and served with veggies and sauce. **If you are dairy-free, skip the Greek yogurt, and just top the eggs and veggies with salsa.
