A delicious way to eat greek yogurt. I like to add this on top of Indian spiced lentils.

Ingredients

    1 dsh. cardamom

    2 c. cucumber

    1 tsp. sea salt

    2 c. Greek yogurt

    1/2 c. red onion

    1/4 c. cilantro

    2 tbsp. lime juice

    1/4 tsp. ground coriander

    1/4 tsp. ground cumin

    1/8 tsp. black pepper

    1 dsh. nutmeg

    1 dsh. cinnamon

Directions

Chop cucumber, place in colander, and sprinkle with coarse salt. Toss, drain well for 30 minutes. Rinse with cold water, drain. Place cucumber on several layers of paper towel. Let stand 5 minutes, pressing down occasionally.

Combine cucumber, Greek yogurt, and remaining ingredients.

Let chill in fridge for at lease 20 min to develop flavors.
