May be served hot or cold.Nice carry to work lunch.
1 tbsp. butter
2 tsp. garlic
1 sml. onion
1/2 red bell pepper
1 c. white quinoa
2 c. vegetable broth
2 tbsp. fresh parsley
1/2 tbsp. fresh thyme
1/4 tsp. sea salt
1 Melt butter in a saucepan over medium heat. Add the onion,garlic,red pepper and saute for about 2 minutes. Add the quinoa to the onion mixture and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth (I like to do 1 cup veg and 1 cup chicken) and bring to boil. Reduce to a simmer, cover, and cook for 20 minutes, or until quinoa is tender.
2 In a bowl, toss quinoa together with parsley, thyme, salt. Sprinkle with lemon juice, and serve.
