Quinoa with nuts, dried fruit, cinnamon, and vanilla. Yummy for breakfast or a snack!
sea salt to taste
1 c. white quinoa
1 cinnamon stick, organic
1/4 tsp. cinnamon
1 1/2 c. water
1/2 c. almonds
1/2 c. dried cranberries
1/2 c. milk, raw or organic
1 tsp. vanilla extract
Toast quinoa in skillet on medium heat until slightly darkened.
Toast coarsely chopped almonds (or walnuts). You can toast them in the oven, toaster oven, or in the skillet along with the quinoa.
Transfer toasted quinoa to a 3-4 quart saucepan. Add boiling water, sea salt, cinnamon stick, toasted almonds, and dried cranberries. Return to a boil, cover, and reduce heat to low. Simmer for 15-20 minutes, stirring occasionally.
Add 1/2 cup milk, if desired.
Remove from heat, take out cinnamon stick, and stir in vanilla. Add freshly ground cinnamon.
