Chili with a twist!
1 c. chicken broth
1/2 c. salsa verde
1/2 lbs. chicken breast
8 oz. cannellini beans
1/4 c. white quinoa
1/2 tbsp. lime juice
1 tbsp. cilantro
sea salt & black pepper to taste
1 tbsp. coconut oil
1/2 med. onion
1 jalapeno pepper
2 clove garlic
1/2 tsp. ground cumin
Heat oil in a large sauce pan over medium heat. Add diced onions and jalapenos and cook about 5-7 minutes, until tender. Add minced garlic and cumin and cook another minute. Add chicken, salsa, chicken broth, beans, and quinoa. Bring to a boil, reduce heat, and simmer until chicken is cooked and quinoa is tender, about 10-15 minutes. Remove chicken, shred it, and return to pan. Add lime juice and cilantro, and season with sea salt and pepper.
