Quinoa Southwest Salad

Quinoa, veggies, and spices make for a delicious salad!


    3/4 c. white quinoa

    1 1/2 c. water

    1/2 tsp. sea salt

    1 med. red bell pepper

    15 1/2 oz. canned black beans

    1/2 c. cilantro

    1/2 c. green onion

    1/2 tsp. ground cumin

    2 tbsp. lime juice

    black pepper to taste

    1/4 c. extra virgin olive oil

    1/2 c. fire-roasted diced tomatoes with green chilies


Combine quinoa, water, and salt in a saucepan. Bring to a boil, reduce heat, and let simmer until water is evaporated, 10-15 minutes.

Mix chopped red pepper, sliced green onions, diced tomatoes and chilies, drained and rinsed black beans, and chopped cilantro in a bowl.

In a separate bowl, combine oil, cumin, lime juice, and black pepper. Stir to mix.

When quinoa is cooled, add to veggie and bean mixture. Add oil mixture, and stir to combine.
