Quinoa skillet breakfast
1 c. white quinoa
1 tbsp. coconut oil
1 garlic
1 hndfl. baby spinach
1/8 tsp. black pepper
1/4 tsp. sea salt
1/2 c. blueberries
1 egg
In a small frying pan, add coconut Oil. Heat oil over med high heat, add minced garlic. Spread garlic/oil evenly around bottom of pan and add cooked Quinoa.Place lid on pan and allow Quinoa to heat for about 3 mins. Lay fresh spinach on top of Quinoa and put lid back on to wilt the spinach. After 2 mins, lift lid and sprinkle salt and pepper evenly over spinach and add blueberries on top of spinach spreading them evening over spinach. Make a small opening in the blueberries large enough for the egg. Crack the egg and drop it in. Replace the lid and allow the food to steam long enough to cook your egg to your liking. The Quinoa should be crispy on the bottom. If it is not, allow it cook a little longer. The skillet will slide right out of your pan onto your plate,. Yuummm,yuuuummm yummm! Enjoy
