This recipe is DELICIOUS!! Serve over Greek yogurt, with fruit, or eat all on its own. Enjoy!
3/4 c. white quinoa
1/2 c. pumpkin seeds
1/2 c. almonds
1/4 c. flax seeds
1/4 c. honey, raw
2 tbsp. coconut oil
1 tsp. cinnamon
1/2 tsp. sea salt
3/4 c. dried fruit
Preheat oven to 350°F. In a large bowl, combine quinoa, pumpkin seeds, almonds, and flaxseed. Heat honey and coconut oil in a small saucepan over medium-low heat. Stir in cinnamon and salt. Pour honey mixture over quinoa mixture; stir to coat. Spread in a 15x10x1-inch baking pan.
Bake uncovered for 20 minutes or until golden brown, stirring twice. Stir in dried fruit (cherries, cranberries, raisins, and/or apricots). Cool for 15 minutes in pan. Spread out on foil. Cool completely, breaking up any large pieces. Transfer to an airtight container. Store up to 2 weeks in the refrigerator.
