Quinoa Pilaf

Delicious vegetarian lunch


    1 tbsp. extra virgin olive oil

    1/2 c. red onion

    2 carrot

    1 c. white quinoa

    2 c. vegetable broth

    2/3 c. walnuts

    1/4 c. fresh parsley


Heat olive oil over med-high heat in a medium size pot. Cook onion until translucent. Chop the carrot and add it to the pan. Cook for 3 minutes longer. Stir in quinoa and vegetable broth, bring to a boil. Reduce heat and simmer (covered) for 15-20 min until quinoa is tender and fluffy. Remove from heat toss in a bowl with chopped walnuts and parsley. Serve hot or room temperature.
