You can make it a full meal by adding variations of vegetables and meat to the dish such as grilled chicken, zucchini, yellow squash and fresh peppers!
2 tbsp. extra virgin olive oil
1 sml. onion
2 tsp. garlic
1 c. white quinoa
2 c. chicken broth
1 tbsp. curry powder
1 tbsp. chili powder
sea salt & black pepper to taste
Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 5 minutes. Pour broth into the pan and bring to a boil. Reduce heat and add curry and chili powders; cover and simmer until tender, about 25 minutes. Season to taste with salt and pepper. Enjoy!
