Quinoa Breakfast Bowl

A spicy quinoa egg scramble.


    2 tbsp. white quinoa

    1/4 c. water

    2 egg

    1/2 c. fresh made salsa

    1/2 jalapeno pepper


Combine quinoa and water in a small pot. Bring to a boil, reduce heat, and simmer (covered) until water has evaporated, about 10 minutes. Remove from heat and set aside.

Meanwhile, scramble the eggs in a pan over medium heat.

Mix together scrambled eggs, quinoa, and diced jalapenos (if using). Top with salsa.
