A soft cookie, chocolate-y, nutty with a hint of banana.
1 c. quinoa flour
1 tsp. baking soda
3 tbsp. cacao powder
1 dsh. sea salt
1 1/2 tbsp. almond butter
2 tbsp. almond milk
1 tsp. vanilla extract
1 egg
1 med. banana
2 tbsp. stevia
1/4 c. chopped nuts
Preheat oven to 350ºF. Line a baking sheet with parchment paper. Combine quinoa flour, baking soda, cacao powder, and sea salt in a bowl. Mash banana in a separate bowl. Add almond butter, almond milk, vanilla, egg, and stevia; stir briskly. Add dry ingredients to wet ingredients, and stir to mix well. Add chopped nuts (optional). Drop by tablespoon onto parchment-lined baking sheet (should be about 18 cookies). Bake for 10 minutes.
Makes 18 cookies. One serving is two cookies.
*To double, double everything EXCEPT the egg and banana.
