Quinoa has been a native grain to Brazil for thousands of years, and has made a great grain for cooking. Together with corn and cook beans, this dish will make you feel as if you are eating a zesty dish straight from South-America.
1 c. corn, canned, organic
30 oz. canned black beans
1/2 c. cilantro, bunch, fresh, organic
1 tsp. ground cumin
1 tsp. coconut oil
1 onion
1 c. white quinoa
3 garlic
1 1/2 c. chicken broth
1/8 tsp. cayenne pepper
sea salt & black pepper to taste
Put oil in a medium saucepan on a medium heat, and stir in onion. Stir onion around until lightly caramelized.
Mix in quinoa and broth, along with cumin, cayenne pepper, and salt & pepper. Cover and lower heat, and let ingredients sit for 15-20 minutes, stirring occasionally.
Mix in corn, then let simmer for about 5 minutes. Mix in beans and cilantro.
Serve while still hot.
