Quickie Ham & Asparagus Roll-Ups

8 servings of 2 each. These are yummy and super fast to make when you just don't have time to cook anything big. My kids love these and I have put them out for many parties, too. Hubby & Kid tested! :-)

Ingredients

    16 asparagus

    16 ham

    1 c. yogurt

    1/2 c. cucumber

    1 tsp. fresh dill weed

    1 tsp. lemon juice

Directions

In a steamer, steam asparagus till crisp-tender and immediately put the asparagus in ice water to stop the cooking. Drain and pat dry. Or you could saute it in a bit of oil or grill it carefully. The steamer just works for me for this.

Wrap each asparagus spear with a slice of ham.

For the Dill Sauce mix together the yogurt, cucumber, dill weed and lemon juice. Put it in a small bowl for dipping.

Serve the roll-ups with the dipping sauce. My family and company always love this! :)

~ Oops I forgot to mention that sometimes I'll add a thin slice of red or green pepper and a slice of raw or organic cheese. I love Havarti. That would add to the protein count of course, but it's an option of another way to prepare this. Then just roll all that up in the ham slice and tie together with chive. ~

I tried to put the dill sauce on the ham and then roll it around the asparagus but it ended up too runny. Now Greek yogurt might work better for thatAnd, spice it up differently if that is something you'd like.
