Quick Chunky Spaghetti Sauce

This is a quick, easy and delicious homemade spaghetti sauce to make when you don't have any fresh tomatoes to use that day. It also freezes very well!

Ingredients

    1/2 c. onion

    1/2 c. green bell pepper

    1 c. white mushrooms

    8 oz. tomato sauce

    15 oz. diced tomatoes, canned

    2 tbsp. honey, raw

    1 1/2 tsp. Italian seasoning

    1 clove garlic

    1 tsp. coconut oil

Directions

In a medium saucepan, saute your onion, green pepper, mushrooms and garlic in the oil for 6-8 minutes. Stir in tomato sauce, undrained tomatoes, sweetener, and Italian seasoning. Lower heat and simmer for 10-12 minutes, stirring occasionally.

Makes 4 servings (3/4 cup each)

Add or take away any spices that you'd prefer. The same with the sweetener. I like some in mine...but you might less, more or none at all. You do what tastes best to You! :)

I usually make my tomato sauces with fresh organic tomatoes but now and then I run out and need some sauce so this is quick and easy. I normally make a double batch of it and freeze in individual portions in small containers.
