Quick and Easy Chicken Fajitas

This Mexican dish is packed with flavor without the need for store-bought spice mixtures. You won't believe that these mouth-watering, made-from-scratch chicken fajitas can be put together in less than 30 minutes.


    2 med. bell pepper, any color

    2 med. tomato

    2 tsp. ground cumin

    1 tsp. chili powder

    1/4 tsp. sea salt

    1/4 tsp. black pepper

    1 tbsp. extra virgin olive oil

    1 lbs. chicken breast

    1/2 c. water

    1/2 med. onion


Mix cumin, chili powder, sea salt, and pepper in a small bowl. Cut chicken breast into strips and season with spice mixture. Place a large skillet over medium heat; add olive oil. Add seasoned chicken strips and sauté for 3 to 4 minutes or until all sides are browned. Add ½ cup water, increase to medium-high heat, and simmer until liquid almost evaporates. Remove chicken from skillet, and keep warm.

Add onion, bell peppers, and tomato wedges to the same skillet; sauté for 5 minutes or until bell peppers are tender. Return chicken to skillet and mix until well combined.

Serve fajita mixture in lettuce wraps. Top with your choice of lime juice, salsa, and cilantro.
