A fun fall side dish!
1/2 c. pumpkin puree, canned
1 1/2 c. chicken broth
sea salt & black pepper to taste
1/2 c. parmesan cheese
2 c. baby spinach
1/3 c. white quinoa
2/3 c. water
2 tsp. butter
2 clove garlic
Combine quinoa and water in a small saucepan. Bring to a boil, reduce heat, and let simmer for 10 minutes, until liquid is fully absorbed and quinoa is fluffy.
Meanwhile, heat butter in a deep skillet or a saucepan over medium-low heat. Add minced garlic, and sauté until fragrant. Add pumpkin puree, chicken broth, sea salt, and pepper; bring to a boil. Reduce heat to low and let simmer for 5 minutes. Stir in parmesan cheese until melted.
Remove sauce from heat. Add cooked quinoa and spinach leaves to the sauce. Stir to combine.
