Pumpkin Souffle

This souffle is so easy to make and it's soooo yummy!


    1 tsp. pumpkin pie spice

    1 pinch sea salt

    1 c. pumpkin puree, canned

    4 egg

    1/4 c. coconut oil

    2 tbsp. almond butter

    4 tbsp. maple syrup

    2 tbsp. coconut syrup or nectar

    1/2 tsp. vanilla extract

    1 tbsp. coconut flour

    1/4 tsp. baking soda

    1 tsp. cinnamon

    1 tsp. ground ginger


Preheat oven to 350°F.

Use a whisk to combine pumpkin, eggs, coconut oil, almond butter, maple syrup, coconut syrup, and vanilla.

Sift together coconut flour, baking soda, cinnamon, ginger, pumpkin spice, and sea salt. Add to wet ingredients and continue whisking until well combined.

Pour mixture into oven-safe ramekins - 4 separate 1-cup portions. Bake in the center of the oven for 25-35 minutes. Or until entire souffle puffs up and center is no longer wet. Enjoy!
