A fall twist on a classic cookie!
1/2 c. butter
1/2 c. coconut sugar
1/2 c. honey, raw
3/4 c. pumpkin puree, canned
1 egg
1 tbsp. vanilla extract
2 tsp. pumpkin pie spice
1 1/4 c. oat flour
2 tbsp. coconut sugar
2 tsp. cinnamon
Preheat oven to 350°F. Line 9x9-inch baking dish with parchment paper.
Combine softened butter and coconut sugar in a large bowl. Use a hand mixer to cream them together. Add honey, pumpkin, egg, vanilla, and pumpkin pie spice. Beat until well mixed. Add the oat flour a little at a time and continue to mix until combined. Pour batter in the prepared baking dish and use a spatula to spread it out evenly.
Combine 2 tablespoons coconut sugar and 2 teaspoons cinnamon in a small bowl. Sprinkle mixture on top of batter in the baking dish.
Bake for 25 minutes, until a toothpick of knife inserted in the center comes out clean. Remove from oven and let sit for at least 15 minutes before cutting into 20 bars.
