These are sweet treats that you don't have to feel guilty for loving! Hard to keep around the house, because they keep disappearing ;)
1 1/2 tbsp. coconut oil
1/2 c. honey, raw
2/3 c. pumpkin puree, canned
1/3 c. Greek yogurt
1 tsp. vanilla extract
1 1/2 c. spelt flour
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. sea salt
1/2 tsp. baking soda
1 c. old-fashioned oats
1 egg
Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
Combine pumpkin, Greek yogurt, honey, vanilla, egg, and melted coconut oil in a large bowl. Use a whisk to mix well.
Add flour, spices, baking soda, and oats. Continue to mix until all ingredients are well incorporated.
Scoop out spoonfuls of dough onto baking sheet (should make 24 cookies).
Bake for 10-12 minutes.
