A great afternoon snack for the kids.
1/4 c. pumpkin puree, canned
1/4 c. honey, raw
1/4 c. butter
1 c. oat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/8 tsp. sea salt
1/2 c. old-fashioned oats
Preheat oven to 375°F. Lightly grease a baking sheet, or line it with parchment paper.
Mix together pumpkin, honey, and butter (butter will still be lumpy). Add in remaining ingredients except oats. Mix well until the butter is no longer lumpy.
Stir in oats. Drop by tablespoons onto cookie sheet. Bake 8-12 minutes until firm and brown.
Let cool slightly before moving to a rack to cool completely.
Makes 16 cookies. The cookies will be a bit crumbly.
